Pronounced: Jezeekee in English, (or at least that’s as close as most of us will get to saying it right). This is a Greek dip that is used in Gyros and many other Greek dishes. It can be used as a dipping sauce for pita or other breads (I prefer sour dough), as well as vegetables. It is the healthiest dipping sauce you will ever find. It’s also cheap and easy to make and very tasty. It makes a great dip when serving plain French bread. Look for some other Greek dishes coming soon to go with it.

Serves: 4-6

NOTE: For best results, prepare 2 hours before serving to allow the flavors to penetrate.

Ingredients:

  • 1 large cucumber, peeled, grated and placed in a strainer to drain off excess liquid

  • 3 garlic cloves crushed

  • 1-1/2 cups plain yogurt

  • 1 Tbsp vinegar or lemon juice

  • 1 tsp dried dill (Optional)

  • Salt and Pepper to taste

Prep:

Peel and grate cucumber(s) using cheese grater. Use medium to fine grater. (I have seen it done without peeling the cucumbers, but I recommend grating them). Drain any excess water. A little cucumber water is OK. Finely mince or crush the garlic.  Add these to the yogurt and mix well. Add the dill, vinegar or lemon juice and salt and pepper to taste. Let sit for 2 hours for best flavor.
