Parmesan Chicken and Broccoli

Serves: 4.

Suggestions: Serve with garlic bread and salad.

Ingredients:
1 cup converted rice
½ cup sliced green onion (4)
12 ounces skinless boneless chicken breast halves, cut into strips
¾ teaspoon dried Italian seasoning, crushed
1 clove of garlic (minced)
1 tablespoon cooking oil
1 - 16 oz jar reduced fat Alfredo pasta sauce
3 cups frozen cut broccoli
1/3 cup grated parmesan cheese
¼ cup diced cooked ham (Optional)
1 - 2 oz jar diced pimientos, drained

Cooking instructions: Preheat oven to 350. Cook rice according to directions. When done stir in the green onions. Place in 9 x 13 inch baking dish and set aside.

In large skillet, cook chicken strips, Italian seasoning and minced garlic in hot oil over medium heat for 6-8 minutes or until chicken is no longer pink. Remove from heat. Stir in Alfredo sauce, broccoli, cheese, ham and pimientos. Season to taste with ground black pepper. Add chicken mixture over rice. Bake covered for 15 minutes. Uncover and bake for another 15 minutes until heated through.
