Shrimp and Shallot Linguini

Serves: 5-6

Prep and cook time: 30 minutes

Ingredients:

  • ½ lb Raw Shrimp (peeled and deveined)
  • 1 ½ lb Linguini
  • 6 Shallots (Shallots are best but if you must substitute use 1 ½ medium yellow onions)
  • 4-5 Garlic cloves
  • 8 Tbsp butter
  • 1/4 cup olive oil
  • 3/4 cup chopped parsley
  • ¼ - ½ Cup lemon juice
  • 1 tsp Black Pepper to taste

Prep:

Boil water and cook Linguini according to instructions. Mix melted butter, olive oil, shallots, garlic, pepper, parsley and lemon juice in a bowl. Add shrimp to mixture. Heat skillet up on medium and once hot add this mixture to skillet and sauté until shrimp turns pink in color. Serve over the Linguini noodles.
